Yield: 4-5 Dozen
- 1 recipe of Peanut Butter Sugar Cookie Dough
- Turbinado sugar
- Vegan chocolate chips
- Prepare cookie dough according to recipe instructions, cover, and chill 1 hour. Roll the chilled dough into 1-inch balls, then roll each ball in the sugar, place on ungreased cookie sheets, and flatten each ball slightly. Bake at 350 degrees for 8-10 minutes or until lightly browned on the bottom.
- Remove the cookie sheets form the oven, then working quickly, firmly press 4 chocolate chips into the center of each cookie. Allow the cookies to cool slightly before transferring them to a rack to cool completely.
