This recipe is a from one of my favorite cookbooks of all time, Appetite for Reduction by Isa Chandra Moskowitz. What I love most about this cookbook is that all the recipes are low in fat and taste fabulous. I have made more then half the recipes in the book (several times) in the six months I have owned it. This is a really great recipe to serve when it is cold out side. It is creamy and delicious and even your non-vegan friends/family will love it! Jason loves chili! So much so that this is the meal he requests for his birthday dinner (along with my sweet vegan cornbread). It is a great chili recipe because it is very heavy on the vegetables, which I love.
