A “Spork Fed” Thanksgiving!

This year, our Thanksgiving dinner was amazing. While my family does not host a 100% vegan Thanksgiving, Jason and I simply prepare our own food and bring it to where ever we are having dinner and enjoy it there. This year, dinner was at Mom Linde’s house. We alternate each year between my family and Jason’s and this year was his family’s turn to be blessed with our presence, lol. In addition to making dinner for Jason and I, I was also preparing dinner for our niece Alyssa (this was her first...

Aunt Jean’s Tofurky Pot Pie

This recipe comes on the box of Tofurky and is a great way to use up any leftovers. I prefer to make my own vegan pie crust and creamed corn, but if you can find prepared vegan versions of these you can go ahead and use them as well. It is a bit time consuming, but it makes a very large pot pie and is well worth the time! Ingredient: 1 pie crust, top and bottom 2 tbsp vegan butter (Earth Balance) 1 medium onion, chopped 1 clove garlic, minced 1 cup potatoes, cubed ½ tsp sage ½ tsp oregano ½ tsp. salt ½ tsp....

Vegan Creamed Corn

Creamed corn is a great staple recipe for Thanksgiving or any other holiday meal, or even just as nice side dish for a regular dinner. The coconut milk makes the corn sweet and creamy and to me, this recipe tastes so much better then the canned, dairy version. It is also great for the Tofurky Pot Pie recipe that comes on the box of Tofurky, that is actually what I originally made this for. Makes: 4 servings | Time: 20 minutes Ingredients: 6 ears fresh corn (or 3 cups frozen corn kernels … if you must) 3...

Maple-Apple Cider Tofu with Stuffing and Apple Cranberry Chutney

This is one of the most yummy recipes I have ever made! In fact, this is what I made for Jason and I on our first vegan Thanksgiving. It was so good, especially the stuffing, that everyone else at the sinner table was eating my stuffing over the regular stuffing. It made me smile! I also make just the tofu for breakfast and we call it “french toast tofu”, it is that yummy! Apple Cranberry Chutney Ingredients 2 tbsp margarine 4 Gala apples, peeled, cored, and chopped (or another cooking apple) 1/4 cup...
