This recipe is a from one of my favorite cookbooks of all time, Appetite for Reduction by Isa Chandra Moskowitz. What I love most about this cookbook is that all the recipes are low in fat and taste fabulous. I have made more then half the recipes in the book (several times) in the six months I have owned it. Three Bean Chili

Jason loves chili! So much so that this is the meal he requests for his birthday dinner (along with my sweet vegan cornbread). It is a great chili recipe because it is very heavy on the vegetables, which I love. I usually make a double batch of this and freeze it in two person servings to keep on hand for a quick winter meal.
